I feel like GRRM jokes about killing off people for fun, but what he really does is make unpredictable and realistic fiction. It's one of
the only series where the bad guys stay on top and bad things happen to good people. And I feel for him because he creates these characters
and builds their lives and then there comes a point where he knows he's going to have to kill them in order for the plot to go a certain way
and I think he jokes about it because I imagine it really hurts him to do that. But he does what needs to be done for the story.

Everyone knows the Starks are noble and traditional. Doesn't necessarily make them heroes, but they're not bad guys either.
In the books the Starks are portrayed mostly as hardheaded, traditional and totally inflexible to change. Not sure how heroic that is.
I'd say they fit the archtype more than the other houses, Even if it's not a great fit.

The hero is Aegon Targaryen. You don't meet him until the fifth book.
Aegon has no strong motive besides what has been put upon him, and with no POVs and little 'screen time' I doubt he will be a major player.
There is no way the hero is introduced until the 5th book of a series. He's a mummer's dragon.
